THE HOPE

Production process

In the first phase, a macerate of wild cherries and sour cherries is prepared, slowly releasing their intense, naturally sweet aromas. The fruit is handled gently to preserve its juiciness and character, with no added sugars. Then, selected botanicals are added, including star anise, which brings a warm, subtly sweet spiced note that creates a unique contrast and depth.

A slow, traditional distillation follows, allowing only the finest, purest, and most aromatic layers to be preserved in the final distillate. Each element—fruit, herbs, and spices—is distilled in its own time to ensure complete control over the flavor profile.

The gin is then allowed to rest, so the flavors can settle and round out into a harmonious whole.
